After a trip to Germany in the 80’s, head brewer Mark Mericle quickly realized that American beer was sub-par compared to what he was drinking in Europe. His desire for fresh, locally brewed beer back home set him on a path to learn how to brew, which he did in Northern California. In 1989, he opened Orange County’s first brewpub – Heritage Brewing Company. Fast forward to October 2013, Mark teamed up with JJ Snyder and Legacy Brewing was born.

Join us and Brewery Ambassador (TBD) to taste hand-crafted microbrews and appetizers.  

The beer list includes:
Chesty Irish Red
This traditional Irish Red Ale has beautiful reddish auburn coloring and drinks with a perfect balance of caramel and honey notes. You will pick up a light malty sweetness and low levels of a fruity nose that is then balanced with Magnum hops.

Clan Ross Scotch Ale
This Scotch Ale is a strong ale style originating from Edinburgh, Scotland in the 19th century. Sometimes referred to as a wee heavy, this ale is dominated by big caramel malt and nutty/toffee flavors and finishes with notes of spiciness. This Scotch Ale has a wonderful warming effect and is best served in a bowled snifter to appreciate the intense malt flavors and aroma.

Hellfire IPA
The name says it all! While this IPA is an all-out hop attack on your senses, bursting with 8 different hop varieties, the finish is very balanced and non-lingering leaving you with a great drinkable west coast style IPA. It has a big citrusy nose of grapefruit and lemon zest with hints of mango. The ample bitterness is then balanced nicely with a malt background to carry the hops to victory!

That Guava Beer
We hope you are ready for this great summer fruit ale; it’s not cloying but contains just enough soft malt flavors accented by fresh white guavas to leave you feeling like you are on a nice tropical island. Huge bursting aromas and flavors come out in the front palate but this beer finishes smooth, dry and refreshing. Enjoy that guava beer. You should have been around while brewing; the fermentation smelled great!

The Illuminated Blonde
Reminiscent of the German style Kölsch with its pale straw/gold color. This blonde ale is an easy drinking beer because of its light malty palate, medium bitterness, and dry finish. You will pick up nice earthy characteristics from the noble hops. Overall, it’s just a nice balanced beer—light bodied, and refreshing.

You will be welcomed with our Jasmin White wine.
Wine with a straw yellow color with greenish shades. Flowery and elegant, citrus fruit enveloped by scents of Jasmin and Mediterranean shrubland. Fragrant and sapid, wide and harmonic; a persuasive fruit with a range of citrus fruits from yellow to red. The highly aromatic indigenous grape variety Zibibbo produces a wine full of style and elegance, charming and graceful, in line with the taste and sun-kissed image of Sicily.

Appetizer, Caponata paired with Branciforti Nero d’Avola wine.
Caponata is a Sicilian eggplant dish consisting of a cooked vegetable salad made from chopped fried eggplant & more ingredients you will discover during the demo.

Branciforti Nero d’avola wine is a red ruby colour, on the palate it’s soft and enveloping. Made from Nero d’Avola grapes, it represents the fruit of a long experience in the most modern vinification technologies, but with a rigorous respect of ancient traditions.

Main Dish, Pasta Alla Norma, paired with Santagostino Baglio Sorìa red wine. Pasta Alla Norma is a pasta dish in Sicilian cuisine created originally in Catania, Sicily, Italy. It is made with tomatoes, fried or sauteed eggplant & more ingredients you will discover during the demo.

Santagostino Baglio Sorìa wine is a deep intense ruby red color with lively shades of purple. It affords concentrated, well-defined nuances of marasca cherries, wild berries, rhubarb, cloves, aromatic herbs and prunes that alternate and blend with charming hints of licorice, ink and tobacco leaves. Suave, soft and caressing, it reveals its great and intensely Mediterranean character admirably blending a powerful and hearty texture, an extraordinary vivacity, silky and fine tannins. It is a wine that has made the history of modern Sicilian wine-making; it is very appreciated by international markets; complex with a superior character; an incredibly pleasant drinking experience with an almost fleshy fruit; a star in its category.

Dessert, Cannoli served with L’Ecru` Passito wine.
Cannoli are Italian pastries of the Sicily region. The Italian singular is cannolo, meaning "little tube" but in English, cannoli is usually used as a singular, and cannolo is rare. Cannoli originated in Sicily and are a staple of Sicilian cuisine. You will discover all the preparation and ingredients during the demo.

L’Ecru wine is an intense golden yellow tending to amber. You can smell fine scents of orange blossom honey, candied orange peels and dried figs, dates, peaches in syrup, which bland harmoniously with delicate hints of lemon grass, marjoram, sage, oregano and oriental spices. An enchanting texture that unfolds almost with a whisper with all the class of its noble lineage; the expression of warm sun of Sicily enriched by subtle yet deep nuances of the sea and fruit that are both suave and exciting. Aristocratic end reserved, it is a sweet and dynamic nectar with an extraordinary suave and polished persistence to be tasted also alone, in the intimacy of your home, because it makes a fine, powerful, and sensual companion, without ever being intrusive.


Etna Bianco & Rosso will also be poured for guests who are just doing a tasting flight.

Jax Y3 rose of Pinot Noir
As eternal rosé lovers, we have always wanted to craft a gem of our own. The key to such a creation would be the ideal vineyard, which we found at the highest acclaimed source in the Russian River Valley. The next step would be the winemaking technique. Harvesting the vineyard in the early morning hours to preserve acidity, the fruit was whole-cluster pressed and fermented in 100% stainless steel. With minimal skin contact, this delicate rosé offers a bone-dry style accompanied by a touch of weight and complexity.

Jax Y3 Pinot Noir
For many years, we have looked at Pinot Noir as a distant fantasy....a varietal that we always loved but knew would be a difficult tackle. Not only is it a highly finicky grape requiring a milder climate, but also we know that Pinot lovers are “die-hard” fans wed to a very specific style. As hot climate Napa Valley vintners, we knew that we could not force our hand until the opportunity presented itself. Fast forward and along came our CEO Dan Parrott who had worked with some of the best producers in Burgundy before jumping on board at JAX. Dan inspired us to find the right vineyard and achieve a killer pinot!

Jax Y3 Taureau
The name Taureau was the name of the Jackson family’s prized bull, legendary for his feisty, high-kicking and vibrant personality. When perfecting this wine at their blending session, the JAX team concurred that the character of their infamous bull reflected the structure and elements of this indulgent red blend... and what a perfect tribute to their family ranching legend.

This wine is what one would expect with a name like Taureau. Boasting incredible purple fruit colors, the flavors of blackberry, black cherry and red fruit ooze into the palate, all supported by polished tannins. Balanced and delicious, this wine should drink well upon release until 2022 or longer.

Jax Y3 Chardonnay
Y3. Or as you may ask, why not? After all, the beauty of this wine runs far deeper than the label. Celebrating three generations of land-tilling, wine-loving Jacksons, siblings Kimberly and Trent are proud to present Y3, a wine as special as the memories of their grandparents at Yarrayne Ranch.

In our humble wine-obsessed opinion, many Napa Valley Chardonnays tend to be over-styled with excessive butter and oak. But as the Jackson siblings know (through lots of “testing”), an outstanding Chardonnay owes its success to outstanding fruit, not a heavy style. We think you’ll agree.

Wes Hagen Is The Winemaker And Brand Ambassador For J. Wilkes Wines In The Santa Maria Valley, California. In 2013, Michael Cervin (Wall Street Journal, Decanter) Rated Wes As One Of The 100 Most Influential Winemakers In The United States (#68).

Wes is considered one of the most influential winemakers by the Wall Street Journal, author of three AVAs, and professor of wine and food pairing.

Wes is an accomplished wine writer, researcher, and lecturer; He has written for the L.A Times Magazine, Sommelier Journal, Burgundy Report and has appeared and been featured / quoted numerous times in the Wine Spectator, Wine Advocate, and Wine Enthusiast.

Wes researched, wrote and had approved the last three AVA’s in Santa Barbara County: Sta. Rita Hills, Happy Canyon and Ballard Canyon.

Wes taught the Food and Wine Pairing program at Allan Hancock College for four years and has lectured on the History of Wine and Santa Barbara Wine at Cornell University, Caltech and many, many other prestigious institutions. His most recent achievement is having been nominated for a TED-talk on the History of Wine.

2015 Pinot Blanc
Pure and focused with tangerine flesh, peach skin, subtle white flowers / citrus blossom, saline, chalk, and granite. Focused and nervey from the oldest Pinot Blanc vines (and a few Melon de Bourgogne) in California, with a touch more structure / acid / verve than previous vintages. Bright and dry with wonderful stone-fruit persistence, mouth-cleansing freshness. Fantastic either as a cocktail wine, Summer Sipper, wine for the lake or the ocean (boating) or with all the food.

2015 Chardonnay
Our Chardonnay has notes of savory apple and lime zest, browned butter and Brulee, clean ocean breeze, hints of tropical fruit (guava / pineapple), complex and surprisingly integrated for such a young Chardonnay. Apple créme Brulee, lime zest and citrus blossom, rich with a flavor akin to pears poached in butter. Firm acid, quite dry, but supported by a good dollop of fruity and oak - toasted richness. Slightly leaner style than 2013, but with enough malolactic and oak treatment to leave no doubt this is a crafty and deliciously balanced Chardonnay. Ready to drink now but will become a little more complex, mineral and nutty between 5 and 8 years from vintage date. Decanting/aerating suggested through 2019.

2015 Pinot Noir
This Pinot Noir has ripe red berry fruits, cherry pie, Kola nut, white pepper, clove and an intense earthy / spicy / savory / meaty complexity that reminds me of great, young Burgundy wine. Bright, fruity, balanced and quite complex for such a juicy youngster. Light, loamy tannins add structure to the light acidity, giving a palate-cleansing character that will improve almost any food that can be put on a plate or in a bowl.

2015 Cabernet Sauvignon
Our dense & rich dark ruby Cabernet Sauvignon has aromas of black fruits, toffee, & cedar. Fruity, juicy, and ripe on the attack - medium body plus with a rare combination of dense, delicious fruit notes, and also a sense of balance and elegance, some Paso - dust minerality and a long, bright, fruity finish. Paso Highlands Cabernet (85%) gives the wine breadth, currant / cassis notes, big flavor, and dense heartiness. Lagrein (15%) adds some grip and mild tannin as well as some complex mid-palate notes and a good, fruity / earthy finish.
